Easy Paneer Kheer or Quick Rabdi in Stahl Saucepan
Call it Rabdi or Paneer Kheer, this sweet dish is a popular delicacy across India. Made in a Stahl Saucepan, you can be sure that you will not get any burns or hotspots while boiling the milk. The precisely rounded lip of the saucepan will ensure that not one drop of this kheer is wasted due to spilling.
Try this easy Paneer Kheer or Quick Rabdi when you are feeling lazy to wait for hours to get the same texture and richness in your star dessert.

Cooking Time : 25 minutes
Serves 4 people
1 litre milk 4 cups
200 gms paneer
1/2 cup sugar
10 strands saffron
1/2 tsp cardamom powder
2 tbsp mixed nuts chopped (Recipe uses almonds and pistachios)
To begin, grate paneer and set aside. This recipe uses a 200 gms block paneer.
Add milk to the Stahl sauce pan. We recommend that you use only full cream milk.
Boil milk and simmer.
Let it reduce to half. Keep the heat on medium.
Add the saffron strands.
Mix well and let it simmer for a few more minutes
Add grated paneer to the milk
Mix well and let it cook for 2-3 minutes
Wait till the kheer becomes thick and creamy. Expect it to thicken further after cooling.
Add the cardamom and mixed nuts.
Mix well and switch off the heat.
Serve chilled or warm.
Paneer Kheer is ready!
Things to Remember:
Use only full fat milk as we need to reduce it to half.
You can either use cow's milk or packet milk.
Add sugar only after milk reduces.
Add nuts of your choice - The recipe uses finely chopped almonds and pistachios
