Hidden Veggie Pasta

This recipe gives tips and tricks to make the quintessential Italian dish nutritious and wholesome

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 celery stalks, diced
  • 2 carrots, peeled and diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 3 cloves garlic, minced
  • 1½ cups tomato puree
  • 4 cups boiled pasta
  • Salt to taste
  • Pinch of sugar
  • Fresh or dried oregano
  • Parmesan, cherry tomatoes and fresh basil to garnish

 

Procedure

  • Warm olive oil in the triply saucepot.
  • Add in the vegetables and cook for ten minutes, stirring occasionally.
  • Season with salt. Stir in the garlic.
  • Once fragrant, add the tomato puree.
  • Cover partially and let it simmer for 15 mins.
  • Remove from the heat, let it cool down and blend it with a hand blender until smooth.
  • Add the boiled pasta to this with some of the pasta water.
  • Add a pinch of sugar, some dried or fresh oregano and salt to taste.
  • Garnish with cherry tomatoes, basil and parmesan.
  • For an even healthier twist, opt for pastas made from protein rich ingredients such as chickpea or lentils.
