Veggie Pasta Soup

Preparation of Veggie Pasta Soup

Other than the vegetable stock, this recipe needs no preparation and is a perfect choice for a last-minute meal. Then, all you need to do is Chop the vegetables as instructed below.

Ingredients for Veggie Pasta Soup

  • 2 tbsp oil
  • 2 bay leaves
  • 2 tbsp chopped garlic
  • 2 Celery stalks, finely chopped
  • 1 carrot, diced
  • 1 cup mushrooms, diced
  • 2 green onions
  • 4 cups vegetable stock
  • 1 cup pasta (as per preference)
  • 1 tbsp black pepper
  • thyme
  • 1 cup broccoli florets
  • 1 cup sweet corn
  • 1 cup spinach
  • 1 tbsp Italian seasoning
  • 1 cup fresh cream
  • salt as per taste

For the Garnish

  • Fried garlic
  • Garlic Toast

How to Make Veggie Pasta Soup

  • In the Versatil Cooker, sauté some garlic and bay leaf. Add the celery, carrots, and mushrooms and sauté well.
  • Add the vegetable stalk, pasta, black pepper & thyme and mix well. Cover with the pressure lid and cook for one whistle.
  • Then, add the rest of the veggies. Mix well. Add water as needed.
  • Add salt, Italian seasoning, and cream. Mix well.
  • Serve it with garlic bread and fried garlic.

Tips to Make Veggie Pasta Soup

  • You can add any veggies of your preference.
  • Prepare the vegetable stock in advance to save some cooking time.
