Kunafa - A Luxurious Delight

Chef Neha tries something new with her Stahl Artisan Hybrid Frypan

It’s never too late to try something new in the kitchen, because with great food, one is only ever going to add to the joy of cooking! Chef Neha Deepak Shah did just that, with a delicious classic Kunafa. Even being a Masterchef, Chef Neha faced up to some jitters, but with Stahl cookware, the flying colours are there for all to see.

Kunafa Recipe:

50 g All Purpose Flour

40 g Corn Flour

110 g Water

1/4 tsp Oil

Simply make a smooth batter, strain it & cook it on a hot tawa. It cooks in just 5 seconds. Remove it immediately. Keep staking it on a plate & cover it with a damp cloth.

For the Ashta Cream Filling:

- 1/4 cup Fresh Cream

- 2 to 3 tbsp Milk

- 2 tsp Corn Flour mixed with 1 tbsp milk

- 2 tsp Sugar

Simply combine everything & cook on low flame until the mixture thickens. Cool it before you use it.

For layering:

Kataifi - Ashta Cream - Mozzarella Cheese - Kataifi & then top it with sugar syrup after cooking.

- Mix Kataifi with 3 to 4 tbsp ghee until each strand is well coated.

- Layer directly on a lightly greased pan.

- First add Kataifi, then Ashta Cream, cheese is completely optional, and then Kataifi. Drizzle a little ghee on top of this & cook on low flame.

- Then bake at 180 degrees C for about 20 mins or until the top is golden brown.

- Once baked, add a one string sugar syrup. Chef Neha usually adds a little rose water to the sugar syrup.

For sugar syrup -

- 1/4 cup sugar with 1 - 2 tbsp water

- Add a few drops of lime juice & then once boiled, add a little rose syrup.
