Turkish Pide Bread

When it comes to baking, the joy of making fresh homemade bread is unbeatable! Try this Pide Bread recipe that Chef Nehal recommends to everyone craving for some soft, freshly baked bread. He’s made it in the Stahl Blacksmith Hybrid Cast Iron Frypan, India’s 1st lightweight, oven proof cast iron cookware because it cooks well and bakes even better!

Here’s what you need to make this delicious bread.

Preparation for Turkish Pide Bread

  • Activate the yeast in warm water and pinch of sugar before making the dough.
  • Once the dough is ready, proof it well before baking it.

Ingredients for Turkish Pide Bread

  • 15 gms instant yeast
  • 2 tsp sugar
  • 200 ml milk, lukewarm
  • 1/4 cup water, lukewarm
  • 3 tbsp vegetable oil
  • 2 tsp salt
  • 3 cups all-purpose flour

For Egg Yogurt

  • 1 egg yolk
  • 1/4 cup milk
  • 2 tsp yogurt
  • 2 tbsp vegetable oil

For the Zatar Onions

  • 1 tbsp oil
  • 1 tbsp butter
  • 2 tbsp sliced garlic
  • 1 cup sliced onions
  • Salt to taste
  • 1 tbsp zatar

For Garnish

  • 1 tbsp sesame seeds

How to Make Turkish Pide Bread

  • Mix the yeast, sugar & water in a bowl and keep aside.
  • Now take the flour in a large bowl, add the salt and mix well. Add the yeast and milk and knead till you get a smooth soft dough. Knead for 5-6 mins then add oil and knead for another 5-6 mins till smooth. If the dough is too sticky, add more flour to get the right consistency.
  • Proof the dough in a bowl till it doubles in size. It usually takes about 60 to 90 mins.
  • While the dough is proofing, prepare the yogurt egg mixture. Take all the ingredients and mix well. Keep aside for later.
  • For the zatar onion, heat oil and butter in a kadai and fry the garlic and onion till they are caramelised. Season with some salt and zatar and let them cool.
  • Once the dough has proofed, knock it back and roll it out into a thick roti. Press down the sides as shown in the video to make a thicker edge and place it on a tray or an oven proof pan like the Stahl Blacksmith Hybrid Frypan. Make a diamond shaped pattern as shown.
  • Rest this again for 5 mins, brush with the egg wash and sprinkle with sesame seeds.
  • Bake in preheated oven at 200 C for 15-18 mins.
