Stuffed Tandoori Cauliflower Recipe

We all love Tandoori Gobi but we’re taking it a notch higher with the stuffed version of the recipe. The sweet and savoury filling of this recipe blends just beautifully with the pungent tandoori masala and smoky, charred flavour. This recipe is a classic appetizer and is enough to get just about any party started! 😋🥬

Here’s what you need to prepare and make this recipe.

Preparation for Stuffed Tandoori Cauliflower

  1. Properly clean the head of a cauliflower.
  2. Boil the cauliflower head with the ingredients given to prep the cauliflower in some water for 10-15 minutes or till it is cooked about 70%. 

Ingredients for Stuffed Tandoori Cauliflower

To Prep the Cauliflower

  • 1 tsp turmeric powder
  • 1 tbsp salt
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 tsp black pepper
  • 1 tsp cloves

For the Stuffing

  • 1 cup grated paneer
  • 1 tbsp chopped almonds
  • 1 tbsp chopped cashew
  • 1 tbsp chopped raisins
  • 2 finely chopped green chillies
  • 2 tbsp chopped coriander
  • Salt to taste

For the Tandoori Dressing

  • 2 tbsp roasted besan
  • 1 tsp ginger garlic paste
  • 2 tbsp mustard oil
  • 2 tbsp chopped coriander
  • 1 tbsp red chilli powder
  • 1 tbsp jeera powder
  • 1 tbsp crushed kasuri methi
  • 2/3 tbsp hung curd
  • 1 processed cheese cube
  • Salt as per taste

For Serving

  • Mint Yogurt Dressing

How to Make Stuffed Tandoori Cauliflower

  • Take the boiled cauliflower head and stuff it with the paneer filling.
  • Mix the dressing ingredients to make the marinade.
  • Apply the marinade on the boiled cauliflower head and let it sit for 30 mins at least.
  • Bake it for 12-15 mins at 200*C.
  • Brush it with a little bit of butter as soon as it’s out of the oven.
  • Serve it with the mint yogurt dressing.

Tips to Make Stuffed Tandoori Cauliflower

  • Boil the cauliflower head in advance to save some cooking time.
  • You can use Blacksmith Hybrid kadhai/frypan in the oven to bake the cauliflower too.
  • Although the handles of the Blacksmith Hybrid kadai do not heat as much on induction and stove top, they could heat up in the oven. Therefore, using mittens is recommended.
