Gujarati Handvo is a traditional Gujarati snack that is yummy as well as healthy. In fact, we think it also qualifies as a balanced meal as it has dal, rice & lots of veggies! Chef Naha Deepak Shah made this recipe in Stahl’s NextGen Cast iron frypan, which is 50% lighter than traditional cast iron frypan. The frypan also uses a lot lesser oil compared to traditional cast iron & is stick resistant, which makes if perfect for this recipe. Preparation for Gujarati Tawa Handvo
Grind the soaked rice, the dals, and the curd until you get a smooth paste and ferment the batter for 6-7 hours.
Ingredients for Gujarati Tawa Handvo
For the Batter
1/2 cup soaked Rice (use short grain rice)
1/3 cup soaked Toor Dal
2 tbsp soaked Urad Dal
2 tbsp soaked Moong Dal
2 tbsp soaked Chana Dal
2 tbsp Sour Curd
3/4 cup Grated Bottle Gourd
1/2 cup Grated Carrot
2 to 3 tbsp Chopped Coriander
1/4 tsp Red Chilli Powder
1/4 tsp Haldi Powder
1 tsp Ginger & Green Chilli Paste
A little Sugar
Salt
3/4 tsp Fruit Salt
For the Tadka
1 tbsp Oil
1/2 tsp Mustard Seeds
1 tsp Sesame Seeds
Few curry leaves
How to Make Gujarati Tawa Handvo
When the batter ferments, add in the rest of the ingredients given for the batter above and mix it well.
In your Blacksmith Hybrid Frypan, heat some oil on low flame and add in the tadka ingredients.
When the tadka is ready, add the fermented batter to the pan and cover it with a lid to cook it well on one side.
Flip the handvo to cook the other side till it is crispy.
Tips to Make Gujarati Tawa Handvo
Cook Handvo on low flame (to check if it is cooked, insert a skewer or a knife)
Cook it on both sides.
Use the vegetables of your choice to make it even healthier.
