Gratin Samosa Recipe by Chef Sneha Singhi Upadhaya

For the Samosa Dough:

  • 2 cups Flour
  • 4 tbsp Oil
  • Salt
  • 1/2 cup water + some more if needed

Kneed oil salt and water together till it’s well mixed. To this add in water and kneed to a stiff dough. Cover with a wet cloth and let it rest for 20-30 mins.

For the Gratin:

  • 2 tbsp Butter
  • 3 tbsp All purpose flour
  • 1/2 cup milk
  • 1/4 cup cream
  • 1 cup boiled Veggies
  • 2 tbsp Parsley
  • Salt
  • 1/2 tsp Pepper
  • 1 tbsp Oregano
  • 1/4 cup Processed Cheese

Heat butter, add in the flour and cook for 30-40 secs. Add in the milk and cream cook while mixing constantly till there are no limbs and the sauce is thick. Next add in all the other ingredients, mix it well. Once the cheese melts take it off heat and let it cool.

Roll out the Samosa dough. Cut it into 1/2 from the centre and shape them into mini/ large Samosas. For the shaping, check my highlights, I have a detailed version there. Just make sure to tightly seal it with some water.

Fry them in hot oil on low heat only. Remove from the oil once they’re golden brown.

Substitutes:

  • Veggies - Apart from peas, carrots, American corn, you can also use broccoli, potatoes, pineapple, bell peppers
  • Parsley - If you don’t have it, omit it
  • Oregano - Basil
