DELICIOUS FRUIT CAKE IN STAHL VERSATIL PRESSURE COOKER

Recipe
Ingredients:
For the Boiled Fruits:

1 cup Orange Juice
-
1 cup Water
-
¼ cup each chopped Dried Fruits (Dried Apricots, Golden Raisins, Black Raisins, Dried Cherries, Tutti Frutti)

¼ cup Butter
-
1 tsp Cinnamon Powder
-
½ tsp Clove Powder
-
½ cup Brown Sugar
For the Batter:
-
1 ½ cups Maida
-
½ cup Sugar
-
½ cup Butter (at room temperature)
-
¾ cup Yogurt
-
½ cup (boiled Dry Fruits)
-
¼ cup Milk
-
½ teaspoon Baking Soda
-
1 teaspoon Pure Vanilla Extract
-
1 teaspoon Baking Powder
Other Ingredients:
- ½ cup chopped Roasted Nuts
Method:

Boil the dried fruits with all the other ingredients for 10 mins and reduce till it’s thick.

Remove and let the dried fruits cook down.

Now whisk together all the wet ingredients for the batter in a bowl, add the dry ingredients and fold well.

Pour the batter into an 8-inch cake tin.

Next heat up the cooker with salt and place a small bowl in the center.

Place the cake tin on top of this bowl and place the lid without the whistle.

Cook on high heat for 30-35 mins till it’s nice and golden and the toothpick comes out clean.

Once the cake has baked, let it cool off, cut it into pieces, and serve at room temperature.
