Cheesy Spinach & Corn Rice With Veg au Gratin in a Kadhai

Chef Shreya has made this recipe just like her mom, but in the Stahl Artisan Hybrid Kadhai as it has a heavy bottom, is stick-resistant, can take metal spoons, and needs very little oil to cook.

Preparation of Cheesy Spinach & Corn Rice With Veg au Gratin

Prep the spinach puree using all the ingredients, except the boiled corn and cooked rice, given below for the Spinach Corn Rice. 

Ingredients for Cheesy Spinach & Corn Rice With Veg au Gratin

For Spinach Corn Rice

  • 1 Bunch Spinach
  • 2 tbsp coriander
  • 1 green chilli
  • 1/2-inch ginger
  • 1/2 cup boiled corn optional
  • 1 cup cooked rice

Veg Au Gratin

  • 1 tbsp garlic
  • 1 carrot
  • 8-9 beans
  • 1/2 cup broccoli
  • 1/4 cup peas & zucchini
  • 2 tbsp butter
  • 5 tbsp maida
  • 5 cup milk
  • 1/3 cup grated cheese
  • Salt & pepper
  • 1 tsp ketchup
  • 1 tsp each Oregano and chilli flakes

How to Make Cheesy Spinach & Corn Rice With Veg au Gratin

  • Heat 1 tbsp oil, 1 tbsp garlic, 1 tsp red chilli flakes, 1 tsp oregano. Cook for 2 minutes and add the spinach puree, cook on low flame to retain color, and add salt to taste.
  • Add 1 tsp lemon juice and pepper powder, add 2 cups of cooked rice. Make sure the rice is cool or else it will break. Mix in the corn. Do a taste test and sprinkle some water if is it too dry.
  • Heat butter, cook all the veggies until crunchy. Add the flour and cook for 2 minutes.
  • Add milk and stir continuously till it thickens. Add all the spices and finish with cheese.
  • Layer a heavy bottom Kadhai with spinach rice, veg au gratin, and a lot of cheese. Drizzle some milk, about 4-5 spoons.
  • Garnish with some Italian herbs, chili flakes, boiled corn kernels, and coriander leaves.
  • Cover and cook for 5 minutes on the lowest heat until the cheese melts. 

Tips to Make Cheesy Spinach & Corn Rice With Veg au Gratin

  • Don’t skip drizzling some milk on top of the cheese before covering. This assures your cheese will melt evenly.
  • You may use your favorite vegetables to make the veg au gratin.
  • Serve hot.
