Cheesy Pizza Tortilla with Grilled Veggies in Stahl Hybrid Cookware

CHEESY PIZZA TORTILLA WITH GRILLED VEGGIES IN STAHL HYBRID COOKWARE

This is a yummy and wholesome meal. You / your kids are going to love this! We've used normal aata / whole wheat flour roti for this recipe, you could use any flour you like.

Pizza Tortilla with Grilled Veggies Recipe by Chef Sneha

For the Sauce:

  • 1 tsp Olive oil
  • 3 cloves of Garlic; smashed
  • 3 Tomatoes; roughly chopped
  • 1/2 tsp Sugar
  • Salt
  • 2-4 Basil leaves

Heat olive oil, add in garlic cook till the garlic starts to brown. Add in tomatoes and cook on high heat for a minute, add in the basil, salt and sugar cook on medium heat for 5-8mins till mushy.

 

Veggies:

  • 1/2 tsp Olive oil
  • 1 cup veggies- I used broccoli and mushrooms
  • 6-8 slices of olives
  • 1/2 tsp Oregano
  • Salt

Heat olive oil, add the the veggies, salt, olives and oregano. Cook on high heat for 2 mins. Remove from heat.

 

Assemble:

  • 1 large Roti
  • Sauce
  • Veggies
  • Cheese - Processed / Mozzarella
  • 1 tbsp Olive oil

Cut the roti from on corner only till it’s 1/2 cut. On 1/4th of the roti, spread the sauce, on the other 1/4th add the veggies, on the next 1/4th add the sauce and on the last 1/4th add the cheese.

Heat olive oil on a pan and cook this on both sides till golden brown, and till the cheese melts. Let it cool and cut into 1/2.

Mix the remaining veggies with the sauce.

Let it cool and pack it up.

Substitutes:

  • Olive Oil - Butter
  • Olives - Chilli Flakes / Mangoes in Brine
  • Veggies - Capsicum, Bell Peppers, Zucchini, Green Beans, Carrots, Paneer
  • Basil - Oregano
  • Processed Cheese - Fresh Mozzarella / Cheddar
